Lamb Testicles Tajine

Ingredients :

2 beef testicles or 4 lamb
testicles
·
1 medium onion, cut into small
cubes
·
3 large onions, thinly sliced
·
1 garlic clove, grated
·
2 tablespoons vegetable oil
·
1 tablespoon olive oil
·
1/2 teaspoon ground turmeric
·
1/2 teaspoon ground ginger
·
1/2 teaspoon ground cinnamon
·
1/2 teaspoon coriander powder
·
A pinch of saffron threads
·
1/2 teaspoon pepper
·
Pinch of salt
·
40 ml water
·
100 grams raisins
·
1 tablespoon honey
Directions :
1-
Thoroughly clean the lamb testicles. Cut the testicles in half lengthwise then
gently peel the outer skin
2- Heat the vegetable oil in a pot, over medium-low heat. Add the onion cubes, garlic, and pinch of salt. Stir for 4 minutes then add olive oil.
3- Add the testicles and cook for 2 minutes on each side. Handle gently so they don’t break.
4- Add the spices: turmeric, ginger, cinnamon, coriander, saffron thread, and pepper. Gently stir. Let cook for 5 minutes and flip the testicles from time to time so that all sides are cooked.
5- Add the water, cover the pot, and bring to a boil.
6- Once the liquid in the pan starts bubbling, add the finely sliced onions. Place the testicles on top of the finely chopped onions.
7- Add honey, cover the pot, and cook for 10 minutes.
8- Drain the raisins from the water and add them to the pot. Add the honey and a pinch of cinnamon. Gently stir, cover, and cook for 30-45 minutes until the onions caramelized. While cooking, flip the testicles from time to time, so that all sides are cooked evenly.
9- Plate in a serving dish and decorate with toasted sesame seeds.
