Chicken Tagine With Caramelized Onions

Ingredients :
§  1 chicken, cut into pieces
§  2 large onions
§  150 grams (½ cup) raisins, soaked in hot water for 1 hour
§  1 teaspoon salt
§  ½ teaspoon pepper
§  1 teaspoon ground ginger
§  ½ teaspoon ground cinnamon
§  ¼ teaspoon ground turmeric
§  2 tablespoon vegetable oil
§  2 tablespoon honey

Directions :
Step 1: Preparing the ingredients

1- Peel the onions and slice them into thin slices.
2- Drain the raisins from their soaking water.

Step 2: Cooking

1- Prepare the marinade: in a medium bowl, combine the salt, pepper, ground ginger, ground cinnamon, and ground turmeric. Add a little bit of water and mix well.
2- Pour the marinade on the chicken pieces, and rub well until every chicken piece is fully coated.
3- Place half of the onion rings in the bottom of the tagine, put the chicken pieces on top, then cover with the rest of the onion rings. Drizzle some vegetable oil and scatter the drained raisins over the chicken.
4- Cover the tagine and let it cook on medium-low heat for 1 hour.
5- From time to time, pour some of the sauce on top of the chicken. Add a bit of water if necessary.
6- When the sauce thickens and the chicken is almost cooked, add the honey. Gently mix the raisins within the sauce. Cover and continue cooking for another 15 minutes.
7- Serve hot!
